This is not simply our job, it’s our passion.With stunning resorts located across the globe and exciting expansion planned, Kerzner International currently has a fantastic opportunity for a Restaurant Chef to join the One&Only Palmilla Family.Responsibilities:The Fine Dining Chef is responsible for leading the culinary operations of a high-end, fine dining restaurant. This role requires exceptional culinary expertise, creativity, and leadership to ensure consistently outstanding dining experiences that meet the highest standards of quality, presentation, and service. The Fine Dining Chef oversees menu development, kitchen operations, staff training, and cost control while maintaining strict hygiene and safety protocols.Key Responsibilities:Lead the preparation and execution of refined, high-quality dishes in accordance with the restaurant's concept and culinary standards.Design and update innovative menus based on seasonal ingredients and guest preferences.Ensure consistent presentation, portioning, and taste of all dishes served.Supervise and mentor kitchen team members, fostering a culture of excellence, discipline, and teamwork.Maintain high standards of cleanliness, hygiene, and food safety in accordance with HACCP and local health regulations.Manage inventory, sourcing, and ordering of ingredients with a focus on quality and cost-efficiency.Monitor and control food costs, waste, and labor productivity to meet budgetary goals.Collaborate with the front-of-house and sommelier teams to ensure a seamless guest experience.Stay current on industry trends, fine dining techniques, and luxury gastronomy innovations.Represent the culinary vision of the brand and ensure it is reflected in every guest interaction.Suitable candidate will be reporting directly to the Executive Chef.At One&Only creating JOY is at the forefront of everything we do.
